In this fifth edition of Mumit Talks, we share the story of Lizbeth Cevallos, a prominent figure in Madrid's mixology scene. Her establishment, located at the famous Jorge Juan 52 street, is known for its sophistication and eclecticism. Lizbeth turned fear into courage to start a business centered on champagne. Today, it is an undisputed benchmark in the sector. In this new chapter, we tell you about her unusual vision of entrepreneurship.
What made you leave everything behind and start your own business?
It may surprise many, but I am a fashion design graduate and a professional photographer. As life changes, on one of many trips to one of my favorite cities in the world, Paris, I fell in love with champagne as a sparkling wine and also with its history. That's where everything started to take shape, although I must admit one thing: a few weeks ago I accidentally found a photo from 10 years ago next to some boxes of Laurent Perrier and I remember talking to the sommelier about sparkling wines and their origin, something that makes them so special among other details. I believe that at that moment, there was already that curiosity and passion for this very special world.
In short, I started because of desire; I always knew this was my path. What I'm passionate about when it comes to entrepreneurship is feeling like a fish out of water and quickly finding a way to integrate research, my knowledge, my passions, and my desires into every project I'm part of. Taking a step into the unknown is always daunting, but I am always confident that something much better awaits on the other side. Trusting yourself and the steps you take is essential; you have to learn to walk with fear as an ally.

Starting from scratch is complicated, especially in a sector like yours. Have you felt supported at all times, or have you fought for your dream against the tide? How many people are part of your business?
Entrepreneurship in any sector requires a lot of hard work and perseverance, but I've been lucky to always feel supported by my loved ones, which is essential and drives you when things get tough. I think it's very important to trust your intuition; businesses always speak to you, and you need to have that sensitivity to see what needs to be strengthened and improved every day.
Currently, I have four people, and it's an honor and a privilege to count on them. One of the biggest challenges is finding people with whom you are aligned to work and make this work transcend. By being aligned, I mean that you understand each other, that you find connection, and that they are passionate about what you do, so that magic can happen.

Would you say Spain is a country that supports entrepreneurs? What advice would you give to anyone considering starting a business? What do you think about turning your hobby/passion into your job?
I believe that entrepreneurship is always a challenge. Spain has given me wings, and although the path hasn't always been easy, that's when you have to knock on many doors and not give up, but rather insist, insist until you succeed.
Turning your passion into your job is incredible, and I feel very fortunate and privileged in that sense. I have had the opportunity and privilege to turn my passions into my work and continue achieving each of my dreams from that perspective. That's why I think it's very important to value yourself, believe in yourself, and prepare yourself knowledge-wise, be curious, research a lot, ask everything you want, and knock on all the doors that are necessary.
Do you believe that social media has been a key channel for boosting your business?
Absolutely! I believe it has helped us a lot in terms of visibility, and the recommendations we receive through these platforms have greatly helped us strengthen aspects of our business, giving them the relevance they require. How would you describe your clients? What do they look for in your champagne bar besides champagne?
They are international clients, curious people who like to try new things, to enjoy a good sparkling wine in a pleasant, warm, and welcoming yet relaxed atmosphere, with friendly and knowledgeable service. Our idea was to normalize drinking champagne every day, something our customers have become passionate about.
On a personal level, which other woman/women inspire you? What is your motto in life?
Anine Bing, I had the pleasure of meeting her on a trip and have followed her career closely.
I actually have two mottos in life:
"Where there is love, there is everything. Because with love, everything is resolved, everything is achieved!"
